Creamy Gnocchi Chicken Soup

Creamy Gnocchi Chicken Soup is a hearty dish featuring tender chicken, soft gnocchi, and a flavorful vegetable base. Carrots, celery, and onions cook slowly in olive oil before simmering with chicken and seasonings. The addition of cream and Parmesan creates a rich, comforting broth that envelops each bite with smoothness and mild spice from herbs and red pepper flakes.

Description

This soup begins with a sauté of diced onion, sliced carrots, and chopped celery in olive oil, softening the vegetables and building a savory base. Chicken breasts or thighs then simmer in chicken broth along with herbs like thyme and tarragon plus red pepper flakes, seasoning the broth gently. After the chicken is tender, it is shredded and returned to the pot.

Adding gnocchi allows the doughy dumplings to cook quickly in the broth, contributing a tender texture that contrasts with the vegetables. The final step includes stirring in half-and-half or heavy cream along with Parmesan cheese to thicken and enrich the soup, creating a creamy consistency with a subtle cheesy finish. The overall flavor is balanced between the mild spice, herbaceous notes, and comforting richness.

Ideal for a cooler day meal, this chicken soup serves well as a filling main course. Adjust seasoning to taste at the end and use slow simmering to extract maximum flavor from the ingredients without overcooking.
