Description
This Creamy Grape Salad uses equal parts seedless red and green grapes, carefully washed and thoroughly dried to keep the creamy dressing from becoming watery. The dressing blends room-temperature cream cheese and sour cream until smooth, then incorporates granulated sugar and vanilla for sweetness and aroma. The grapes are folded into this mixture to coat each piece evenly. After chilling for at least an hour, the salad firms slightly, and the flavors harmonize. Garnishes of toasted chopped pecans and light brown sugar add texture and a sweet crunch contrasting the soft grapes and creamy dressing. The salad is best served chilled and is often prepared shortly before serving to maintain the fresh grape texture.
Ingredients
- 2 pounds green grapes about 5 cups, seedless
- 2 pounds red grapes about 5 cups, seedless
- 8 ounces cream cheese room temperature
- 1/2 cup sour cream
- 1/4 cup granulated sugar
- 2 teaspoons vanilla extract
- 1/4 cup light brown sugar packed
- 1/4 cup pecans chopped, toasted
Instructions
- Remove the grapes fom the vines. Wash thoroughly with cold water. Allow the grapes to dry completely before proceeding with the recipe.
- Add the cream cheese and sour cream to a medium bowl. Use an electric mixer (or wooden spoon or spatula) on medium-low speed to mix until thoroughly combined and no lumps remain.
- Add the sugar and vanilla extract to the cream cheese mixture. Beat until well incorporated.
- Add the dry grapes to the cream cheese mixture. Fold until the grapes are completely coated.
- Cover and place in the refrigerator to chill for at least one hour and up to three hours.
- When ready to serve, garnish with chopped, toasted pecans and brown sugar.
Notes
- Prepare the salad the same day it will be served to maintain the dressing's consistency.
- Wash and dry grapes thoroughly; drying helps prevent watery dressing.
- For best results, use seedless grapes only.
- To prep early, wash and dry grapes and keep cream cheese mixture separate until combining before serving.
