Ingredients

Servings
  • 2 onion sweet, thinly sliced
  • 2 tbsp avocado oil Chosen Foods brand 100% pure
  • 2 tsp salt
  • 2 tsp sugar
  • 1 baguette
  • olive oil
  • 3/4 cup goat cheese softened
  • 1/4 cup Greek yogurt
  • 1 tbsp chives fresh, minced
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper ground
  • 2 tbsp Worcestershire sauce

Instructions

  1. Slice onions very thinly (this can also be done on a mandolin if you desire).
  2. Heat a medium-sized pot or high-sided skillet over medium heat. Add the avocado oil and once warm turn to medium-low and add the onions, sprinkle with salt and sugar. Cook, stirring occasionally until the onions are caramelized and golden, this can take about 30 minutes.
  3. Pre heat the oven to 375F. To make the crispy baguette, using a bread knife, slice the baguette into 1-inch thick slices. Brush the baguette slices with olive oil on one side and place in a single layer on a baking sheet. Toast for 10 minutes total, flipping halfway through. Set aside.
  4. Transfer caramelized onions to a cutting board and chop coarsely into smaller pieces.
  5. Stir together softened goat cheese and yogurt. Mix in chopped caramelized onions, fresh chives, garlic powder, salt, pepper and worcestershire sauce.
  6. Serve with toasted baguette!

Notes

  • Remember, caramelizing onions takes time so keep the heat on medium-low the entire cooking time.
  • Try this dip as a spread on sandwiches, burgers or bagel too!
  • Would also be delicious served with crackers, pita, pretzels or fresh vegetables.
