Creamy Horseradish Sauce

This horseradish sauce blends prepared, well-drained horseradish with sour cream, apple cider vinegar, chives, and a touch of Worcestershire sauce for a tangy, creamy condiment. The draining step removes excess moisture, preventing a watery texture and concentrating the horseradish's sharpness. The sauce delivers a balanced heat that complements roasted or grilled meats and can be adjusted by swapping chives for scallions or omitting them altogether. Its creamy and piquant character makes it useful as a dip or spread.

Description

The Creamy Horseradish Sauce begins by pressing the prepared horseradish through a fine mesh sieve to remove liquid, which prevents a thin sauce and intensifies the spicy bite. Combining it with sour cream provides a luscious and cooling backdrop while apple cider vinegar adds brightness and subtle acidity. Minced chives or scallions introduce gentle onion notes, and Worcestershire sauce deepens the flavor with umami elements. The mixture is chilled before serving to allow flavors to meld and the sauce to thicken slightly.

This sauce pairs well with roast beef, pork, smoked fish, or as an accompaniment to sandwiches and burgers. It provides a piquant contrast without overwhelming the main dish.

To maintain the best texture, keep prepared horseradish dry when possible, using fine draining and patting techniques outlined. Adjust seasoning with salt and white pepper to taste.
