Creamy Instant Pot Tortellini Soup with Sausage

Hearty tortellini soup with sausage and diced vegetables. This complete meal is ready in under 30 minutes.

Ingredients

  • 1 pound Italian sausage mild
  • 1 carrot diced, medium
  • 2 celery sliced, stalks
  • 1 onion chopped, medium
  • 4 garlic minced, cloves
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 9 ounce cheese tortellini
  • 1 14.5 ounce diced fire roasted tomatoes canned
  • 6 cups chicken broth or vegetable broth
  • 1 cup heavy cream
  • 2 cups spinach fresh baby
  • Parmesan Cheese red pepper flakes to garnish (optional, shredded

Instructions

  1. Add olive oil to Instant Pot insert and turn to saute setting.
  2. Cook Italian sausage breaking the meat up while cooking. Cook until sausage is no longer pink or the internal temperature reaches 160°F. Remove the cooked sausage from the Instant Pot.
  3. Add diced carrots, celery and onion to the Instant Pot. Saute for about 3 minutes or until the onion is translucent.
  4. Add minced garlic cloves to sautéd vegetables and cook for an additional minute.
  5. Return cooked Italian sausage to the vegetable mix. Stir and add Italian seasoning.
  6. Turn off Saute setting and turn Instant Pot to the Manual setting.
  7. Add tomatoes, tortellini, and broth to the sausage and vegetable mix.
  8. Place the lid on the Instant Pot and seal the vent. Set the timer to 2 minutes.
  9. After the timer goes off, carefully quick release the pressure from the Instant Pot.
  10. Add fresh baby spinach and heavy cream. Stir until all ingredients are warm and the spinach has wilted.
  11. Serve with shredded parmesan cheese and a dash of red pepper flakes if desired.

Notes

  • If you don't have baby spinach you may want to rough chop regular fresh spinach into bite size pieces.
  • Frozen spinach is not recommend for this recipe. It will water down the flavors of the soup.
