Description

This version starts by sautéing minced jalapeno peppers and diced green onions in butter to release their flavors. Flour is whisked in to form a roux base, cooked briefly before adding heavy cream and milk to create a rich sauce. Sharp cheddar cheese is gradually stirred in until fully melted, producing a smooth, creamy texture with a pronounced cheese flavor balanced by the jalapenos' mild heat and the freshness of green onions.

Elbow pasta is cooked separately with generous salting for seasoning, then combined with the cheese sauce to thoroughly coat each piece. Served immediately while warm, the dish presents a satisfying blend of creamy, cheesy, and spicy elements. This recipe invites adjustment of jalapeno quantity depending on heat preference.

Ingredients

  • 2 Tablespoons butter
  • 3 Tablespoons jalapeno pepper (finely minced, may use more depending on spice preference)
  • 4 green onions (white and light green parts diced)
  • 2 Tablespoons flour
  • 1 cup heavy cream
  • 1 cup milk may use 2% but whole is preferred, whole
  • 3 cups cheddar cheese grated, sharp
  • 1/2 teaspoon salt (more if needed for taste)
  • 1/2 lb. elbow pasta or cellentani or cavatappi pasta

Instructions

  1. In a large saucepan, melt butter over medium-low heat. Add the jalapeno and green onions and saute for 5 minutes, stirring often.
  2. Whisk in the flour and continue to cook for 4-5 minutes, stirring often.
  3. Pour in the heavy cream and whole milk and whisk together. Add cheese, 1 cup at a time, until melted, stirring well after each addition.  Let cook for 10-15 minutes, stirring often.
  4. Meanwhile, cook 1/2 pound of pasta according to package instructions.  Generously salt the water to ensure the pasta is well seasoned.  Once pasta is done cooking, drain well, and combine with cheese sauce. 
  5. Serve immediately while warm.
