Creamy Leftover Turkey Casserole
Description
The casserole starts with al dente bowtie pasta and tender broccoli florets cooked together and drained. Meanwhile, a creamy sauce is prepared by sautéing onions and bacon, then simmering with cream, parmesan cheese, parsley, and garlic and herb cream cheese until thickened. The cooked turkey is stirred in along with the pasta and broccoli to coat all ingredients evenly.
This creates a rich combination with balanced savory, cheesy, and creamy flavors. The topping of cheddar cheese and fresh breadcrumbs adds a golden, crisp layer when baked at 400°F. The casserole is baked for a short time to melt the topping and develop color without drying out the filling.
This dish re-purposes leftover turkey into a hearty, one-dish meal suitable for dinner. Its creamy texture and mix of textures from pasta, vegetables, and topping provide satisfying mouthfeel and flavor depth. Allowing the casserole to cool slightly before serving helps it set for cleaner portions.
Ingredients
For the pasta/vegetables
- 300 g dried pasta I used bowtie / farfalle, 10.5 oz
- 1 broccoli florets, small
- 1 ½ tsp salt
Sauce / Casserole
- 1 tbsp butter
- 1 onion , diced
- 1 tsp salt
- 1 tsp garlic powder
- ½ tsp black pepper ground
- 100 g Bacon chopped, scant 1/2 cup; or leftover ham
- 300 ml cream 1.25 cups
- 100 g Parmesan Cheese heaped 1/2 cup grated; or Gruyere cheese
- 1 tbsp parsley chopped
- 150 g cream cheese garlic and herb, 5.2 oz
- 450 g turkey sliced, cooked, 1 pound; or rotisserie chicken
- 45 g cheddar cheese grated, 1/2 cup
- 4 tbsp breadcrumbs fresh
Instructions
- Preheat the oven to 200C (400F). Bring a large pot of salted water to the boil and cook the pasta, adding the broccoli florets before the pasta is done. You want the pasta and broccoli to be fairly al dente. Drain and set aside (if you time it right it should be ready when the sauce is).
- Meanwhile heat the butter in a large pan and pan fry the onion and bacon for 5-7 minutes until slightly softened. Add the salt, pepper and garlic powder.
- Stir in the cream, grated parmesan and parsley. Simmer over low heat, stirring, until the sauce has thickened.
- Add the cream cheese (I used Boursin) and stir until it melts into the sauce.
- Now stir in the leftover turkey, pasta and broccoli until they are coated in the rich creamy sauce.
- Transfer to a casserole dish. Top with breadcrumbs and plenty of cheddar cheese (or cheese of your choosing). Bake for 15-20 minutes or until golden. Cool slightly before serving.
