Creamy lemon garlic shrimp pasta
Description
The recipe starts by cooking tagliatelle pasta to al dente and reserving cooking water. Shrimp are sautéed in butter until opaque and golden, then removed to preserve their tenderness. Garlic is briefly cooked in the remaining butter to release aroma without browning. Cream and fresh lemon juice are added along with chopped parsley, seasoning the sauce which is simmered gently until thickened enough to coat a spoon.
The cooked shrimp are returned to the sauce, then the drained pasta is tossed in with some reserved cooking water to loosen and evenly coat the noodles. The dish combines the sweetness of shrimp with the tang of lemon and the richness of cream and butter, finished with fresh parsley to add brightness and color.
It's suggested to serve with lemon wedges and extra parsley for garnish, enhancing the fresh citrus flavor. This pasta makes a comforting meal featuring a balanced creamy and zesty profile that highlights shrimp as the main protein.
Ingredients
- 500 g/1lb tagliatelle or pasta of your choice
For the Creamy lemon garlic shrimp pasta sauce
- 3 tbsp butter
- 500 g/1lb Shrimp deveined and shelled, or prawns
- 4 garlic crushed, cloves
- 1 cup/250ml cream
- 2-3 tbsp lemon juice fresh
- parsley finely chopped, fresh; handful
- salt to taste
- black pepper to taste
Instructions
- Cook the pasta in a large pot of salted boiling water until al dente. Drain and reserve 1 cup of cooking water.
- In the meantime, melt 2 tablespoons of butter in a large skillet/frying pan and cook the prawns in batches until golden brown and opaque. Season the prawns to taste.
- Remove from the pan and set aside.
- Add the remaining butter and garlic and cook for a few seconds, until the garlic is fragrant then pour in the cream, lemon juice (start with 2 tablespoons and add more if you wish), parsley and season to taste.
- Allow to simmer over gentle heat until the sauce coats the back of a spoon. Add the shrimp back in and adjust seasoning.
- Add the pasta and a little of the cooking water and toss until the pasta is coated in the sauce.
- Serve with lemon wedges and chopped parsley.
