Creamy Mashed Sweet Potatoes
Description
The recipe begins by simmering cubed sweet potatoes with salt until fork tender, then draining and mashing them in the pot over low heat. Melted butter and cream add richness, while maple syrup and warming spices cinnamon and nutmeg impart gentle sweetness and depth of flavor. Greek yogurt is stirred in for creaminess and a slight tang, enhancing the overall texture. A hand mixer fluffing step softens the mash further, creating a light consistency without excessive lumps.
Served topped with cubed butter and chopped parsley, this dish can accompany a variety of main courses, especially during cooler seasons or festive meals. The sweetness and spice complement roasted meats well.
Ingredients
- 3 lbs sweet potato peeled and cubed
- 1/2 teaspoon salt
- 1/3 cup cream or more
- 1 cup Greek yogurt or sour cream
- 4 tablespoons butter melted, unsalted
- 2 tablespoons maple syrup or honey
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- parsley for garnish, chopped
Instructions
- Place the cubed sweet potatoes in a large saucepan or Dutch oven and add enough water to cover by about 1 inch.
- Add salt and bring the mixture to a simmer over medium-high heat. Reduce the heat and simmer, uncovered, until the potatoes are fork tender, about 10 to 15 minutes.
- Drain well the water, leaving only the potatoes in the pot over medium-low heat. Mash the sweet potatoes to your desired consistency using a potato masher or fork.
- Add melted butter, cream, maple syrup, cinnamon, and nutmeg. Stir to combine. Add Greek yogurt and stir to combine. If needed, add more cream.
- Use a hand mixer to whisk the potatoes for about 1 minute to make them fluffier.
- Serve, topped with cubed butter and parsley.
