Creamy Miso Mushrooms

Creamy Miso Mushrooms feature oven-roasted mixed mushrooms and onions coated in a miso, garlic, and soy sauce mixture, finished with cream for a rich texture. The roasting concentrates the mushrooms' umami, and folding in white or brown miso paste adds savory complexity. Served with steamed spinach and rice, this dish delivers a balanced, creamy, and mildly salty flavor profile.

Description

This recipe starts by roasting a mix of mushrooms in a high-sided baking tray to ensure even cooking and prevent sauce spills. Separately, a mixture of olive oil, minced garlic, soy sauce, miso paste, water, salt, and pepper is combined with sliced onions, then poured over the mushrooms. The tray returns to the oven to soften the onions and meld these savory flavors. The final step is stirring in cream to add softness and richness, warming it briefly before serving.

The mushrooms develop a tender but firm texture, enhanced by the salty, umami notes from the miso and soy. The cream rounds off the earthiness with a smooth finish. This dish pairs well with rice and steamed spinach, which balance the savory cream sauce and provide textural contrast. Using a high-sided tray concentrates the flavors without spilling, and even chopping helps the mushrooms cook uniformly.

Optional serving ideas include turmeric rice for color and flavor, or low-carb alternatives like zucchini noodles. The dish also works well as a main course alongside vegan mashed potatoes or roasted turnips for heartier meals.
