  • 1 1/2 tbsp butter unsalted
  • 1/2 cup onion diced
  • 1 large garlic clove, minced
  • 2 cups whole-wheat orzo pasta
  • 2 1/2 cups chicken stock low-sodium, plus more if needed
  • 3/4 tsp kosher salt
  • 1/2 cup heavy cream
  • 1/2 cup Parmesan Cheese grated, plus more for garnish
  • 2 1/2 cups baby spinach fresh, roughly chopped

Instructions

  1. Heat a medium pot over a medium heat. Add butter. Once the butter melts, add the onion and garlic. Saute until slightly softened and fragrant, about 2 minutes. Add orzo. Toss to coat in butter, garlic and onion. Toast the orzo, stirring often until some pieces are slightly toasted and brown.
  2. Stir in the the chicken stock and salt. Bring to a boil and reduce to a simmer. Cover and cook for 10-12 minutes or until the orzo is aldente and most of the chicken stock has been absorbed. Make sure to stir the orzo a few times so it doesn't stick to the bottom of the pan. If the orzo is still not done when the liquid has all been absorbed, add in another 1/4 cup of chicken stock.
  3. Add the heavy cream, parmesan cheese, and spinach. Stir until spinach has wilted and cheese has melted. Season to taste with salt and pepper. Garnish with parmesan cheese.
