Creamy Parmesan Basil Shrimp
Description
This recipe sears seasoned shrimp briefly before removing them to retain tenderness. Heavy cream is added to form a creamy sauce, enriched with freshly grated Parmesan and fresh basil leaves that wilt gently into the sauce, infusing a herbal brightness.
Returned shrimp reheat briefly in the sauce, coating them in luscious cream. The dish pairs well served over pasta, zoodles, or spaghetti squash, where the creamy sauce clings to the strands for a comforting main course.
A substitution of half and half for heavy cream can thin the sauce somewhat. Adjust seasonings carefully after cream addition. Using fresh Parmesan and basil yields best results.
Ingredients
- 1 1/2 pounds Shrimp
- 3 tablespoon butter
- 4 garlic minced, large cloves
- 1/2 yellow onion finely minced
- 3-4 ounces red bell pepper thinly sliced, roasted
- 1/4 teaspoon paprika
- 1 1/2 cups heavy cream
- 1 cup (packed) basil plus more for garnish, fresh leaves
- 1 cup Parmesan Cheese fresh grated
- 1/4 teaspoon red pepper flakes crushed
- 1/2 cup white wine or chicken stock
- salt to taste
- black pepper to taste
Instructions
- In a large non stick pan on medium heat, melt 2 tablespoons butter. Season shrimp with salt and pepper, then sear, 1-2 minutes on each side, until just pink. Remove from the pan and set aside.
- In the same skillet add 1 tablespoons butter. Add onion, garlic, peppers, paprika, red chili pepper flakes, salt and pepper. Sauté for about 5 minutes, until onions and peppers are softened.
- Add wine to deglaze the skillet and bring to a gentle simmer until reduced by half.
- Reduce heat to medium low. Add cream to the skillet and stir until a creamy sauce forms. Taste and adjust seasoning with salt and pepper. Add Parmesan, stir until melted into sauce. Stir in basil, simmer until wilted, 1-2 minutes.
- Add shrimp back to the skillet and reheat 1-2 minutes. Sprinkle with fresh basil and serve over pasta, zoodles, spaghetti squash.
Notes
- Half and half can replace heavy cream for a lighter sauce but expect a thinner consistency.
- White wine adds acidity and depth; chicken stock may be used as an alternative but alters flavor.
- Fresh basil should be added towards the end to preserve its aroma and color.
