Ingredients

  • 8 ounces pasta rotini, fusilli, shells, or elbows
  • 1 (15-oz) White beans like cannellini, northern, navy, or chickpea, canned
  • 1 cup cucumber diced
  • 1 red bell pepper diced
  • 1/4 cup corn fresh grilled or canned and drained
  • 1/4 cup olives sliced
  • 1/4 cup pickles chopped
  • 1 onion sliced, shallot or small red onion
  • 1 celery chopped, rib
  • 2 Tablespoons parsley minced
  • 2 Tablespoons dill minced

Dressing:

  • 1/2 cup mayonnaise
  • ¼ cup sour cream or Greek yogurt
  • 2 cloves garlic
  • 1 Tablespoon lemon juice
  • 1 Tablespoon white vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon kosher salt
  • ½ teaspoon red pepper flakes each
  • ½ teaspoon Italian seasoning
  • ½ teaspoon black pepper

Instructions

  1. Cook the pasta in a large pot of salted boiling water as per package instructions. Drain it and rinse it under cold water for 10-15 seconds so it doesn't overcook.
  2. While the pasta cooks, prep your veggies and make the dressing. Add all the sauce ingredients to a blender and blend for 30 seconds or until creamy.
  3. To a large bowl, add all ingredients. Drizzle with the dressing and toss to combine.
  4. Serve immediately or store in the fridge covered with plastic wrap or in an airtight container for up to 3 days.
