For the pea salad:

  • 450 g green peas fresh or defrosted from frozen, 1 lb
  • 128 g Bacon or pancetta, cooked, cubed, 1 cup
  • 96 g cheddar cheese grated, mature sharp, 3/4 cup
  • 3 tablespoon red onion finely chopped

For the sour cream dressing:

  • 2 tablespoons sour cream
  • 1-2 tablespoons mayonnaise half fat
  • 2 teaspoons cider vinegar
  • 1/2 teaspoon paprika
  • salt to taste

Instructions

  1. Combine peas, bacon, grated cheese and red onion.
  2. Mix together salad dressing ingredients.
  3. Add as much of the dressing as you want to the salad and mix until combined.
  4. Serve your creamy pea salad beside any mains.

Notes

  • Make the salad ahead and chill to blend flavors, stirring before serving.
  • The dressing can be made with all mayonnaise if preferred.
  • Add a tablespoon of chutney to the dressing for added sweetness if desired.
