Creamy Pea Salad with Bacon Recipe

This Creamy Pea Salad combines thawed peas with diced cheddar, celery, and red onion for a crunchy texture contrast. The dressing made from yogurt, mayonnaise, and apple cider vinegar adds a tangy creaminess that coats all the ingredients evenly. Crisp bacon pieces folded in just before serving provide a savory, smoky bite that complements the fresh vegetables. It’s a refreshing and flavorful salad that can be prepared ahead and served chilled or at room temperature.

Description

The Creamy Pea Salad with Bacon Recipe blends frozen peas with diced cheddar cheese, minced celery, and red onion to create a mixture with distinct crispness and mild sweetness. The dressing combines yogurt, mayonnaise, and apple cider vinegar, seasoned with salt and black pepper, to produce a creamy, tangy coating for the vegetables. Cooked bacon crisped in a pan and chopped adds a smoky, savory element to the salad, enhancing its flavor profile.

The salad’s combination of textures—crisp vegetables, creamy dressing, and crunchy bacon—makes it suitable as a side dish for barbecues or potlucks. The recipe suggests mixing the bacon in just before serving to maintain its crispness.

This salad can be made up to three days in advance, allowing the flavors to meld, though the bacon should be added fresh to keep its texture.

Ingredients

Servings
  • 4 cups peas frozen
  • ½ cup cheddar cheese diced
  • ½ cup celery minced
  • cup red onion minced
  • ½ cup yogurt
  • ¼ cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • ½ teaspoon salt sea salt
  • ½ teaspoon black pepper sea salt
  • 4 lices Bacon

Instructions

  1. Place the peas in a colander and run them under water to remove any ice. It's ok if they're not completely thawed. Drain them well and place them in a large bowl with the cheddar cheese, celery, and red onion.
  2. In a small bowl, mix the yogurt, mayonnaise, apple cider vinegar, salt, and pepper. Pour this creamy sauce over the peas and mix well. Set the peas aside on your counter while you cook the bacon - or up to 3 days in your fridge.
  3. In a medium-sized pan over medium heat, cook the bacon until crispy, about 8 minutes. Cool then chop.
  4. Just before serving, mix the bacon into the peas.
