Creamy Peppered White Gravy

Creamy Peppered White Gravy is a smooth sauce made by melting butter and cooking flour with spices before whisking in milk. It yields a thick, creamy gravy with a balanced salt and black pepper flavor, optionally enhanced by dried thyme and cayenne pepper, perfect for accompanying meats, biscuits, or mashed potatoes.

Description

This gravy begins by melting butter then whisking in all-purpose flour along with kosher salt, black pepper, dried thyme, and cayenne pepper. Cooking this mixture briefly forms a roux that thickens the sauce. Warm milk is gradually added while whisking to avoid lumps. The mixture is then brought to a vigorous simmer and cooked until it reaches a creamy, thick consistency. If the gravy becomes too thick, water or milk can be added to adjust the texture.

The result is a classic white gravy with peppery notes and subtle herbal and spicy undertones from thyme and cayenne. It’s versatile for pairing with breakfast dishes like biscuits and gravy or adding richness to roasted or fried meat dishes.

Notes indicate this recipe was updated from a simpler version, offering flexibility in milk quantities to achieve preferred thickness.

Ingredients

Servings
  • 1/3 cup butter
  • 1/3 cup all-purpose flour
  • 2 cups milk
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1/4 tsp thyme optional but recommended, dried
  • 1/4 tsp cayenne pepper optional

Instructions

  1. Add butter, and melt over MED heat.  Once melted, add flour, salt, pepper, thyme, and cayenne and whisk to combine.
  2. Cook flour/butter mixture for 1-2 minutes.
  3. Slowly pour in milk, about 1/2 cup at a time, whisking after each addition, until all milk has been added and no lumps remain.
  4. Bring to a vigorous simmer, whisking frequently.  Allow to simmer for about 3 - 5 minutes, or until gravy is smooth, creamy and thickened to your liking.
  5. If gravy gets too thick, add a splash of milk or water to thin it out.

Notes

  • The recipe allows adjusting milk quantity for desired gravy thickness, adding 1-2 extra tablespoons if needed.
  • Ensure to whisk continually while adding milk to avoid lumps for a smooth gravy.
  • This gravy suits classic dishes like biscuits and gravy or as a base for other savory preparations.
