Description

This recipe blends pesto, heavy cream, dry white wine (or chicken broth), and minced garlic in a skillet over medium heat to form the sauce base. When it gently bubbles, uncooked potato gnocchi is stirred in, covered, and cooked to tenderize and thicken the sauce as the gnocchi releases starch. After uncovering and stirring again, the sauce is adjusted for thickness before freshly grated Parmesan cheese is incorporated just before serving.

  • 1/4 cup pesto
  • 1 cup heavy cream aka whipping cream
  • 1/4 cup dry white wine or chicken broth
  • 2 cloves garlic minced
  • 1 pound potato gnocchi uncooked
  • 1/2 cup Parmesan Cheese freshly grated
  • salt to taste
  • black pepper to taste

Instructions

  1. Add the pesto, cream, wine, and garlic to a deep skillet over medium heat.
  2. Once the sauce starts to gently bubble, stir in the gnocchi. Cover the pan and cook for 5 minutes.
  3. Uncover the pan and give it a good stir. Continue to cook it for a couple more minutes, stirring often (the sauce will thicken quickly as the gnocchi releases more starch).
  4. Once the sauce is thickened to your liking, stir in the parmesan cheese. If the sauce gets too thick at any point, add in another splash of wine or cream. Season with salt & pepper as needed and serve immediately.

Notes

  • This recipe serves 4 to 6 as a side dish.
  • You do not need to pre-boil the gnocchi; it cooks directly in the sauce.
  • The starch released from the gnocchi helps thicken the sauce quickly.
