  • 4 potato pre-cook potatoes by boiling or baking them, cooked
  • 1 onion diced, medium
  • 3 tbsp butter unsalted
  • 1 tbsp flour
  • 2 cups milk whole
  • 3 cups water hot
  • 1 tbsp chicken bouillon base better than bouillon brand

Toppings

  • 1/2 cup cheddar cheese grated
  • 1/2 cup bacon crisps
  • 1/2 cup green onion diced

Instructions

  1. Prepare all ingredients for the soup: dice the onions, pre-cook & chop potatoes, and prepare all toppings (cheese, bacon crisps, green onion).
  2. Preheat a large pot with butter, then add onions and cook until they are caramelized. Stir in the flour and mix well.
  3. Add milk & hot water into the pot. When it starts simmering, add in potatoes and Better Than Bouillon chicken base. If necessary, season the soup with salt, but keep in mind that the toppings (cheese and bacon) tend to be salty.
  4. Let the soup simmer until creamy, for about 10 minutes. Serve with your favorite toppings (cheese, bacon, green onions).
