Creamy Ranch Chicken

Creamy Ranch Chicken features boneless chicken breasts seasoned with Italian herbs and seared to a golden crust before being cooked in a rich cream sauce made with cream of chicken soup, sour cream, milk, and ranch seasoning mix. The sauce is infused with onion powder and offers a tangy, savory flavor that complements the tender chicken. This dish pairs well with baked potatoes or vegetables as a comforting entrée.

Description

This recipe starts by slicing and tenderizing chicken breasts, then seasoning them with Italian seasoning, salt, and pepper before searing in butter and olive oil to develop a browned outer crust. The skillet then becomes the base for a creamy ranch sauce made by combining cream of chicken soup, milk, sour cream, onion powder, and ranch seasoning mix, which simmers gently to meld the flavors and thicken.

The partially cooked chicken returns to the sauce to warm through and absorb the tangy, herbed flavors. The resulting entree has tender, juicy chicken with a smooth, creamy sauce enhanced by the distinct ranch seasoning that adds zest without overpowering. The recipe notes that additions like crumbled bacon or frozen vegetables can be incorporated into the sauce.

This dish serves four and can be paired with baked potatoes or other sides, making for a satisfying meal. The sauce texture is smooth and rich, balancing the well-seasoned chicken.

Storage tips include refrigerating leftovers for up to three days or freezing up to three months. Care is advised to use ranch seasoning mix rather than dip mix, as their flavor profiles differ significantly.

Ingredients

Servings

Chicken

  • 2 chicken breast large, boneless, skinless
  • 2 teaspoons Italian seasoning
  • salt
  • black pepper
  • 2 tablespoons butter melted
  • 1-2 tablespoons olive oil

Sauce

  • 10.5 oz. cream of chicken soup
  • 1 ½ cups milk
  • 1 cup sour cream at room temp
  • ½ teaspoon onion powder
  • 1 oz. ranch seasoning mix about 3 Tablespoons, packet

Instructions

Season/Sear the Chicken:

  1. Slice the chicken into 2-3 thinner slices. Pound with a meat tenderizer if needed, the chicken will plump up more when cooked. Aim for ½ inch thick slices.
  2. Sprinkle each side of the chicken with Italian seasoning and salt/pepper. Brush one side of each piece with melted butter, make sure the butter isn’t too hot.
  3. Heat olive oil in a large pan over medium-high heat. Sear the chicken in batches for 4-5 minutes per side, until a golden brown crust has developed. Remove and set aside.

Make the Sauce

  1. Add the sauce ingredients to the same skillet over medium heat. Stir until combined. Let it bubble gently and reduce for 5 minutes. Add the chicken and spoon the sauce on top.
  2. Cover the skillet partially and let the chicken heat through and absorb the flavors from the sauce, about 10 minutes.
  3. Optional: Serve with baked potatoes and spoon the sauce over each potato (it is so good that way)!

Notes

  • Use ranch seasoning mix, not ranch dip mix, for proper flavor in the sauce.
  • Adding crispy bacon or frozen vegetables to the sauce works well and adds variety.
  • Adjust the number of chicken breasts according to size to maintain cooking consistency.
  • Store leftovers in an airtight container in the fridge for up to 3 days, or freeze for up to 3 months.
