Creamy Ritz Cracker Chicken and Rice Casserole

Creamy Ritz Cracker Chicken and Rice Casserole combines diced cooked chicken with instant rice, chicken broth, sour cream, and creamy soup to create a hearty baked meal. The casserole is topped with buttered crushed Ritz crackers, which bake to a golden, crisp crust contrasting the creamy rice and chicken filling. It’s a comforting dish suitable for easy weeknight dinners with pantry staples.

Description

This casserole layers cooked, diced chicken with minute instant rice soaked in chicken broth and mixed with sour cream and cream of chicken or mushroom soup. Optionally sautéed onions add mild sweetness and texture. The mixture is baked in a single dish to integrate flavors and cook the rice thoroughly. A topping made by mixing melted butter into crushed Ritz crackers is added partway through baking, then returned to the oven until the cracker topping turns golden brown and crisp.

The creamy filling contrasts well with the buttery, crisp cracker crust, providing a pleasing variety of textures. The use of instant rice shortens cooking time and simplifies preparation. This casserole serves well as a substantial main course or a potluck contribution.

For a milder texture, omit the sautéed onions, or add your preferred seasonings to enhance flavor. Serve warm straight from the casserole dish.
