Creamy Salmon and Potato Skillet

Simple sautéed salmon fillets in a creamy garlic sauce and potatoes cooked to perfection and ready in less than an hour. Made with just a handful of simple ingredients.

Ingredients

Servings
  • 1 pound baby potato halved
  • 4 salmon skinless fillets
  • salt to taste, kosher salt
  • black pepper to taste, kosher salt
  • 1 tablespoon olive oil

Sauce:

  • 3-4 garlic pressed, cloves
  • 1 cup vegetable stock low-sodium
  • 8 ounces cream cheese
  • 2 tablespoons chives chopped
  • 1/2 teaspoon chili flakes

Instructions

  1. Place the 1 pound baby potatoes (halved) in a pot of water and boil just until they begin to soften.
  2. Do not overcook as they'll get mushy—once ready, drain and season with Salt.
  3. Season the 4 skinless salmon fillets with Kosher salt and pepper.
  4. Heat the 1 tablespoon olive oil in a non-stick pan and fry the salmon until golden on both sides, then set aside. 3-4 minutes on each side.
  5. In the same preheated pan, saute the 3-4 garlic cloves(minced) for 30 seconds.
  6. Deglaze the pan with the 1 cup low-sodium vegetable stock and allow it to bubble for a couple of minutes.
  7. Add the 8 ounces cream cheese and use a whisk to incorporate and get a creamy sauce.
  8. Stir in the 2 tablespoons chopped chives, 1/2 teaspoon chili flakes, and potatoes. Return the salmon to the pan and drizzle with the creamy sauce.
  9. Garnish with freshly ground black pepper, and extra chives, if desired.

Notes

  • use any other oil like avocado oil in place of olive oil
  • if you prefer using low-fat cream cheese that is fine.
  • you may use dried or fresh chives 
  • I prefer that you use skinless salmon fillets 
  • any baby potatoes will work
