Creamy Spinach Artichoke Chicken has all the flavor of spinach artichoke dip in a quick and easy one-pan dinner (keto and low carb too!). Seasoned chicken is pan seared, and then nestled in a delicious creamy sauce packed with plenty of artichokes and spinach. This meal can be on the table in less than 30 minutes! Serve with rice, mashed potatoes, pasta, or your favorite side.

Ingredients
- 2 large chicken breast sliced in half lengthwise (to make 4 cutlets
- 1/2 teaspoon Old Bay seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1 tablespoon butter unsalted
- 1/2 onion chopped or minced
- 3-4 cloves garlic finely minced
- 1/2 cup chicken broth low sodium
- 1 cup heavy whipping cream
- 1/2 cup Parmesan Cheese freshly grated
- 12- ounce marinated artichokes liquid drained & discarded/reserved, quartered, jarred
- 5- ounce baby spinach fresh, package
- lemon optional, juice of ½ lemon
Instructions
- Season both sides of the chicken with the spice mix; set aside.
- Heat oil in a large heavy duty pan over medium-high heat. Add the chicken and cook 2-3 minutes per side. Remove chicken from skillet and set aside.
- To the same pan, add the butter and onion; cook 3-4 minutes or until tender and lightly golden. Add the garlic and cook for about 30 seconds. Next, add the chicken broth and bring to a simmer then lower the heat and add the heavy cream and parmesan cheese. Stir and bring to a simmer then stir in the artichokes and spinach; simmer for 2-3 minutes or until spinach has wilted. Taste sauce and adjust salt as needed.
- Return chicken to the pan and drizzle with fresh lemon juice. Serve immediately with rice, mashed potatoes, pasta, or your favorite side.

- Store leftovers in an airtight container in the refrigerator for up to 4 days. Due to the creamy sauce, we do not recommend freezing this dish.
