Creamy Steel Cut Oats

This recipe offers creamy steel cut oats prepared by simmering and then cooling them overnight in the fridge, which softens the oats without continuous cooking. The oats provide a hearty texture that becomes tender after soaking, making it a filling base for various toppings like banana, berries, hemp seeds, and maple syrup. This preparation is practical for making a nourishing breakfast ahead of time and reheating portions as needed.

Description

Creamy Steel Cut Oats are made by boiling steel cut oats briefly and then letting them absorb the water and soften overnight in the refrigerator. This method allows the oats to reach a tender yet slightly chewy consistency without long cooking times in the morning. Toppings such as banana slices, berries, hemp and chia seeds, and maple syrup complement the natural nuttiness and earthiness of the oats. The recipe relies on simple soaking and gentle reheating, allowing the oats to maintain a creamy, comforting texture. This oatmeal is versatile and can be customized with different toppings based on preference.

The oats cook in water with a pinch of sea salt, then sit covered overnight in the fridge, streamlining breakfast preparation. When ready to eat, heat the portion gently before adding fresh toppings. This approach means the oats are convenient for busy mornings without sacrificing texture or flavor.

Leftover oats can be stored in the refrigerator up to one week, making it easy to prepare a batch for multiple meals. Reheat with a splash of water or milk to loosen the texture. Avoid leaving the oats at room temperature overnight due to food safety concerns.

Ingredients

Servings
  • 1 cup steel cut oats
  • 4 cups water
  • pinch of sea salt
  • cinnamon toppings of choice
  • banana
  • berries
  • hemp seeds
  • chia seeds
  • maple syrup

Instructions

  1. Place oats, water and salt into a saucepan and bring to a boil, watching carefully so the water doesn’t boil over. Turn down heat quickly and allow the oats to simmer for 1 minute.
  2. Remove from heat and let cool. Cover with a lid and place in the fridge overnight.
  3. The next morning, portion out the amount you want to eat and heat in a saucepan over medium-high heat until hot.
  4. Portion the oatmeal into bowl(s). Dress with toppings of choice. I love banana slices, berries and nut butter.

Notes

  • Store leftover cooked oats in an airtight container in the refrigerator for up to one week.
  • Reheat refrigerated oats on the stove or microwave, adding a bit of water or milk to adjust consistency if needed.
  • Do not leave the oats at room temperature overnight to prevent food safety issues.
