  • cup lemon juice
  • 2 large cloves garlic
  • 4 teaspoons white miso or chickpea miso
  • 1 tablespoon maple syrup
  • rounded ½ teaspoon salt fine sea salt
  • ½ teaspoon red pepper flakes adds subtle heat but isn't very spicy, crushed, optional

Instructions

  1. Combine all ingredients in a high-speed blender. Blend until smooth, stopping to scrape down the sides as needed.
  2. Taste and adjust seasonings, adding more miso, salt, lemon, or red pepper to taste. Add another tablespoon or two of water for a thinner consistency.
  3. Pour into a lidded jar or container, and refrigerate until ready to use.

Notes

  • Soaking raw sunflower seeds for 30 minutes to 1 hour can improve blending if you lack a high-speed blender.
