Creamy Sweet Corn Casserole with Jiffy Mix
Description
Creamy Sweet Corn Casserole with Jiffy Mix blends canned creamed corn and drained corn kernels with sour cream, eggs, melted butter, shredded cheddar cheese, and Jiffy corn muffin mix. The combination creates a moist and rich casserole seasoned simply with salt and pepper. After mixing thoroughly, the casserole is baked uncovered at 350°F for around 40 minutes until the top is lightly browned and the center is set but still soft. An additional layer of cheddar cheese is sprinkled on top in the last minutes of baking to melt and brown lightly.
The casserole has a creamy texture from the sour cream and corn, balanced by the slight crumbly textural contrast from the corn muffin mix and melted cheddar. It offers a subtly sweet and savory flavor profile suitable as a side dish alongside roasted meats or holiday meals.
Alternatively, the casserole can be made in a slow cooker on low or high heat, allowing for convenient hands-off cooking while achieving a similar creamy texture. Monitoring during slow cooking is suggested to avoid overcooking.
Ingredients
- 1 can (15 oz) creamed corn
- 1 can (15 oz) corn kernel drained
- ¾ cup sour cream
- 2 large egg beaten
- ¼ cup butter melted
- 1 ½ cups cheddar cheese shredded, divided
- 8.5 oz Jiffy corn mix
- ½ teaspoon salt
- ½ teaspoon black pepper
Instructions
- Preheat the oven to 350 degrees.
- Get out and measure all of your ingredients.
- Add wet ingredients to a medium-sized bowl and stir to combine. Add all of the ingredients, including 1 cup of the shredded cheddar cheese to the bowl.
- Mix until all of the ingredients are completely combined.
- Pour the corn casserole mixture into a prepared 9 x 13 baking dish and bake uncovered for 40 minutes.
- You can tell that your corn casserole is done when it's lightly brown on top and the center is set -- but still soft.
- Top with the remaining ½ cup cheese of shredded cheddar cheese and bake an additional 5 minutes or until the cheese is melted.
- Serve warm and enjoy every bite.
Notes
- You can prepare this corn casserole in a slow cooker on high for 2½ hours or low for 4 hours, watching closely since slow cookers vary.
- Use a prepared 9 x 13-inch baking dish for even cooking and easy serving.
- For best texture, bake uncovered to allow the top to brown and the center to set without becoming too firm.
