Ingredients

  • 3 cups turkey cooked, shredded
  • 1 tablespoon olive oil
  • 4 ounces mushroom sliced
  • 1 cup carrot diced
  • 1 cup celery diced
  • 1 onion about ¼ cup, diced, small
  • 2 tablespoons all-purpose flour
  • 3 cups chicken broth
  • 1 cup wild rice quick cooking
  • 1 (12-ounce) turkey gravy McCormick Simply Better, container
  • 1 cup half and half
  • salt to taste
  • black pepper to taste
  • parsley fresh chopped for garnish

Instructions

  1. In a large pot over medium-high heat, add 1 tablespoon olive oil, 4 ounces sliced mushrooms, 1 cup diced carrots, 1 cup diced celery, and 1 diced small onion, and cook for about 5 minutes until tender. Whisk in the 2 tablespoons all-purpose flour and cook for 1-2 minutes more to create a paste.
  2. Whisk in the 3 cups chicken broth and bring to a gentle boil. Add the 1 cup quick cooking wild rice, reduce the heat to low, bring it to a simmer, and cook until the rice is tender.
  3. Add the 1 (12-ounce) container McCormick Simply Better Turkey Gravy, 1 cup half and half, and 3 cups cooked shredded turkey and cook until heated through. Add salt and pepper to taste and top with fresh chopped parsley for garnish before serving.
