Creamy Turmeric Soup
Description
Creamy Turmeric Soup starts by gently cooking diced onion in sesame oil until translucent, then adding fresh or frozen stir fry vegetables until tender. Ground turmeric and paprika are stirred in briefly to release their color and flavor.
Chicken broth, coconut milk, oyster sauce, and rice noodles are added and cooked until the noodles are al dente, absorbing the fragrant spiced broth. The soup’s base is rich and creamy from coconut milk, with earthy turmeric balanced by the mild smokiness of paprika and a subtle umami note from oyster sauce.
Seasoned to taste with salt, this soup can be garnished with scallions, Thai basil, cilantro, hoisin sauce, or chili sauces to customize its flavor profile to preference. It is versatile and comforting, suitable as a light meal or starter. Cooking time depends on the type of rice noodles used.
The recipe can be prepared in any medium-sized pan, not requiring specialized cookware. Stirring coconut milk before adding ensures consistency in creaminess.
