Creamy Whole30 Mashed Cauliflower

This Creamy Whole30 Mashed Cauliflower offers a low-carb alternative to mashed potatoes by pureeing cooked cauliflower with coconut cream and ghee. The result is a smooth and creamy side dish with a mild, buttery flavor and optional fresh basil for brightness.

Description

The recipe starts by chopping a large cauliflower head into florets and processing them into a rice-like texture. These are then cooked in a skillet over medium heat with coconut cream and ghee until the liquid is absorbed. Returning the mixture to the food processor creates a velvety smooth texture.

The use of coconut cream and ghee provides richness and creaminess without dairy, delivering a satisfying mouthfeel. Optional chopped basil adds an herbaceous note that can lighten the dish.

Serve this mashed cauliflower as a side dish to replace heavier starches, pairing well with meats or roasted vegetables. The creamy texture makes it a versatile base in lower-carb meals.

Leftovers can be stored in the refrigerator for up to three days and reheated gently.

Ingredients

Servings
  • 1 cauliflower about 4 cups, large head
  • 1 can coconut cream about 14 ounces
  • 2 tbsp ghee or grass fed butter
  • 1/2 tsp basil optional, chopped

Instructions

  1. First, chop head of cauliflower into florets.
  2. Then, add florets to a food processor. Process until cauliflower resembles cauliflower rice.
  3. Add riced cauliflower, ghee, and coconut cream to a skillet over medium heat. Cook for 7 to 8 minutes, or until coconut cream has been absorbed.
  4. Carefully pour back into the food processor. Process until smooth and creamy.
  5. Then, serve. Garnish with chopped basil and additional ghee or butter if desired.

Notes

  • Ghee can be substituted with grass fed butter if desired.
  • Process the cauliflower mixture fully for the smoothest, creamiest texture possible.
  • Store leftovers in an airtight container in the fridge for up to three days.
