Crescent Roll Breakfast Casserole

The Crescent Roll Breakfast Casserole layers cooked chopped bacon and sharp cheddar cheese atop a base of crescent roll dough in a baking dish. A mixture of eggs and milk poured over the top sets into a rich and savory custard as the casserole bakes. The crescent dough creates a tender, flaky crust that contrasts nicely with the creamy egg filling and salty bacon. Light garnishes of chives, green onions, or parsley add a fresh touch to each serving.

Description

The Crescent Roll Breakfast Casserole begins with unrolled crescent roll dough pressed into a baking dish, forming a buttery and flaky crust. Cooked bacon and grated cheddar cheese are spread over this base for hearty flavor. The casserole is completed by whisking eggs with milk, salt, and pepper, then pouring this custard mixture evenly over the layered ingredients. Baking at 375°F allows the egg mixture to set into a tender, custardy interior while the crust turns golden brown.

The texture combines the crisp, slightly flaky crust of the crescent rolls with the moist, savory filling of eggs, bacon, and melted cheddar. This dish makes a filling breakfast or brunch option and can be portioned easily for gatherings or family meals. Optional garnishes of fresh chives, green onions, or parsley contribute a subtle herbal brightness.

To avoid burning the crust during baking, it is helpful to cover the casserole loosely with foil once the edges begin to brown. The casserole benefits from resting about 10 minutes before slicing to allow it to set fully. For variation, sautéed vegetables can be softened and added before baking. Using either crescent dough sheets or regular crescent rolls, seams should be sealed for uniform crust texture.

Ingredients

Servings
  • 2 (8 ounce) crescent rolls Pillsbury refrigerated; or crescent dough sheets; canned
  • 1 ½ cups Bacon cooked, chopped
  • 1 cup cheddar cheese grated sharp
  • 6 large egg
  • 2 cups milk whole
  • kosher salt to taste
  • ground black pepper to taste
  • chives optional garnish; fresh; sliced chives and green onions
  • green onion
  • parsley

Instructions

  1. Preheat the oven to 375°F. Spray a 13-inch x 9-inch baking dish with nonstick cooking spray. Unroll the crescent dough and spread the dough in the bottom of the prepared dish. It’s fine if the dough overlaps slightly. Gently press together the perforations to seal the dough.
  2. Place the chopped bacon on top of the crescent roll dough. Sprinkle with cheddar cheese.
  3. In a medium bowl, whisk together the eggs and milk. Add salt and pepper to taste, if desired. Pour the egg mixture over the bacon and cheese.
  4. Bake, uncovered, for 35 – 40 minutes, or until the eggs are set. Check on the casserole after about 20-25 minutes. If the crust is looking golden brown, cover the casserole loosely with foil and continue baking until the eggs are set. This will prevent the crust from burning.
  5. Allow the casserole to rest for about 10 minutes before slicing and serving. Garnish with chives, green onions, or parsley.
