Crescent Roll Breakfast Casserole
Description
The casserole starts with browning and crumbling pork sausage, which provides a flavorful, meaty foundation. The crescent roll dough forms a buttery, flaky crust when baked in the bottom of a 9x13 pan. The egg mixture incorporates shredded mozzarella and cheddar cheeses along with Italian seasoning, lending creaminess and depth.
Once assembled, the casserole bakes until the eggs set through and the crescent roll is a golden crust, creating a layered dish with savory richness and tender textures. The combination of two cheeses balances milder mozzarella with sharper cheddar.
This dish is suitable for preparing the night before by assembling and refrigerating, then baking in the morning. Leftovers can be stored for several days in the refrigerator or frozen for longer periods, making the casserole convenient for meal planning.
Ingredients
- 1 pound pork sausage
- (1 package) 8 ounce crescent roll dough refrigerated
- 10 egg beaten
- 2 cups mozzarella cheese shredded
- 2 cups cheddar cheese shredded
- 1 teaspoon Italian seasoning

- Prepare a 9x13 casserole dish by lightly spraying it with cooking spray. Preheat the oven to 350°F.
- Heat a large deep skillet over medium-high heat. Add the sausage and cook until brown. Drain and crumble the sausage. Set aside to use later.
- Line the bottom of the baking dish with the crescent roll dough. Gently smooth the perforations closed. Sprinkle the crumbled sausage over the top.

- Bake for 25-30 minutes, or until a knife inserted in the center comes out clean.
Notes
- Assemble the casserole the night before, cover, and refrigerate for easy prep.
- Remove from the fridge before baking and set on the counter while preheating the oven.
- Store leftovers in airtight containers for 3-4 days in the fridge or freeze up to 2 months.
