Description

This recipe starts with tubes of crescent roll dough that are kneaded to close perforations and rolled into a rectangle.   • 1 tube crescent rolls Pillsbury is vegan, in a tube
  • 2 Tablespoons vegan butter divided
  • ½ teaspoon cinnamon
  • 1 Tablespoon brown sugar
  • 3 Tablespoons powdered sugar
  • 1 Tablespoon soy milk or almond or rice milk
  • 1 teaspoon of vanilla

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Pop open the crescent rolls and roll the dough into a ball, kneading it to work out the perforations.
  3. Using a rolling pin, roll it out into a rectangle.
  4. Spread 1 tablespoon of margarine over the dough. In a small bowl, mix together the brown sugar and cinnamon, and then sprinkle it onto the margarine.
  5. Roll the dough up into a long roll and use a sharp knife to cut it into 1-inch discs.
  6. Put the discs into a lightly oiled muffin tin (a baking sheet will do if you're short a muffin tin), and bake until golden brown, about 15 minutes. Set aside.
  7. While cooking, mix the margarine and 1 tablespoon of powdered sugar with a hand mixer (by hand is fine, too). Alternate milk, remaining sugar, and vanilla, beating until smooth. Add more plant-based milk or sugar to get the consistency you prefer.
  8. Frost the cinnamon rolls.

Notes

  • Use a very sharp knife or serrated blade to cut the rolls cleanly to prevent squishing and filling leaks.
  • Begin checking the rolls near 12 minutes and remove once lightly golden to avoid dryness and crumbliness.
