Crispy Air Fryer Mashed Potato Balls
Description
This recipe uses leftover mashed potatoes combined with sharp cheddar cheese and egg, forming a mixture that can be shaped into balls. They are chilled to help firm up, then rolled in panko breadcrumbs to create a crunchy coating. Cooking them in an air fryer or oven ensures even roasting and crispiness without deep frying.
The resulting potato balls have a contrast between the crispy outer crust and the creamy, cheesy potato interior. Their mild seasoning from the leftover mash is complemented by the cheddar's sharpness. The air fryer method requires care to avoid overcrowding, promoting even cooking and browning.
Serve these as a snack or side, optionally with dips or garnishes like diced onion, parsley, or chives. They are versatile and appealing for using leftover mashed potatoes in a new way.
To enhance crispiness, spraying the potato balls with cooking spray before and after coating is effective. Different cheeses and herbs may be added to adjust flavor. Ensure potatoes are at room temperature before mixing to ease handling.
Ingredients
- 2 cups potato leftover, mashed, at room temperature
- 1 cup cheddar cheese shredded, sharp

- Remove potato balls from the refrigerator and roll each ball in panko flakes and place back on the baking sheet.
Air Fryer Instructions
- Spray the insert of the Air fryer with non-stick cooking spray and place the mashed potato balls in a single layer making sure the air can circulate (don't over crowd).
- Turn the air fryer to 375°F and set the timer for 10 minutes. Turn over the potato balls after five minutes. Cook until crispy.
- Place on a cooling rack and serve with dipping sauce or garnish with diced onion, parsley or chives.
Oven Baked Instructions

- Put prepared potatoes in the oven at 400°F for 10 minutes or until crispy. Turn balls once.
- Place on a cooling rack and serve with dipping sauce or garnish with diced onion, parsley or chives.
Notes
- Use well-seasoned leftover mashed potatoes, slightly warmed for easier mixing.
- Spraying potato balls with cooking spray before and after coating improves crispiness.
