Crispy Air Fryer Sweet Potato Fries (No Cornstarch!)

These crispy air fryer sweet potato fries are made without cornstarch and rely on soaking the cut fries to remove starch for better crispness. They can be cut as traditional fries or wedges, coated lightly with olive oil and salt, then air fried with stirring for even cooking. The fries develop a golden, crispy exterior while remaining tender inside, offering a simple alternative to deep frying with minimal oil.

Description

Crispy air fryer sweet potato fries (no cornstarch) start by cutting sweet potatoes either into traditional thin strips or wedges. Soaking them in cold water from 30 minutes up to 8 hours helps eliminate excess surface starch, which promotes crispness. After drying, tossing with a small amount of olive oil and salt enhances flavor and texture during air frying.

The fries are air fried at 390°F (200°C) for 15 to 20 minutes, shaken regularly to ensure even cooking and browning. This method yields fries with a crunchy outside and a soft, tender interior, comparable to oven-baked fries but faster and less oily. They can be cooked from raw or partially blanched if short on time.

These fries are a good side dish or snack option that avoids deep frying yet achieves a satisfying crisp texture. Adding a small amount of oil improves flavor and crispness without excessive fat.

Tips from notes include the option to blanch fries briefly if pressed for time, and air fryer preheating is optional but may shorten cooking. Soaking or blanching is important for achieving best crispiness.

Ingredients

Servings
  • 1 sweet potato
  • 1 tsp olive oil 5 mL
  • Pinch salt

Instructions

  1. Cut: To cut traditional fries, cut your sweet potato lengthwise into thin planks and cut each into strips. To cut sweet potato wedges, cut your sweet potato in half lengthwise. Cut in half lengthwise again, then cut each of those halves in half again. (Each potato should make 8 wedges, though you can cut them down smaller if your sweet potato is large.)
  2. Soak: Soak fries in cold water for 30 to 60 minutes (or as long as 8 hours) before air frying*.
  3. Dry: Drain and pat dry sweet potato wedges. Add to a bowl, then drizzle with vegetable oil (about 1 teaspoon per potato) and a pinch of salt, tossing to coat.
  4. Air Fry: Add fries to your air fryer, spread out in as single of a layer as possible. Cook at 390°F (200°C) for 15 to 20 minutes, shaking every few minutes to evenly cook (wedges may need an extra 1 or 2 minutes).

Notes

  • Soak sweet potato fries in cold water for at least 30 minutes to remove starch and promote crispiness.
  • If short on time, blanch fries by boiling for 30 seconds then cooling them quickly before air frying.
  • Preheating the air fryer is optional; skipping it may require slightly longer cooking time.
  • Use a small amount of oil to enhance crispness and flavor without adding too much fat.
