Ingredients

Servings

Baked Avocado Fries

  • ½ cup all-purpose flour 50 g
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 2 egg
  • 1 cup panko breadcrumbs 30 g
  • 2 avocado

Chipotle Ranch Sauce

  • ½ cup yogurt 120 g, plain, Greek
  • ¼ cup mayonnaise 60 g
  • 1 Tbsp chipotle sauce from a jar of adobo peppers
  • 1 tsp ranch seasoning

Instructions

  1. Prep: Preheat oven to 400°F (204°C). In a medium bowl, stir together the flour and spices. In a second bowl, whisk the eggs until the whites and yolks are combined. Place the panko in a third bowl.
  2. Cut Avocado: Cut the avocados in half lengthwise and remove the pits. Place the avocados cut side down and cut each half into 4 equal-sized pieces, then gently peel the skin off of each.
  3. Bread: Working one at a time, dip each avocado slice in the flour first, then egg, then panko. Place on a parchment-lined baking sheet.
  4. Bake: Bake the fries for 15 minutes until golden brown and crispy.
  5. Sauce: While the avocado bakes, combine all sauce ingredients for serving.

Notes

  • To air fry, place the breaded avocado fries in an air fryer in a single layer. Air fry at 400°F (204°C) for about 7 minutes until golden brown and crispy.
  • 400°F (204°C) for about 7 minutes until golden brown and crispy.
  • Best served immediately. To store, keep in an airtight container in the fridge for up to 3 days. To reheat, pop them in the oven or air fryer to get crispy and warm again.
  • Are avocado fries healthy? You bet! The fat and fiber are super satisfying, and I think the crunch is so fun. Just make sure to split this recipe among friends - all things in moderation!
