Crispy Baked Chicken Drumsticks

The Crispy Baked Chicken Drumsticks recipe creates tender chicken with a thoroughly seasoned, crispy skin achieved through a coating of olive oil, a spice mixture including smoked paprika, garlic and onion powders, and a dusting of flour and baking powder. Baking on a rack allows air circulation to crisp the underside, while spraying with oil enhances browning. The method involves baking at two temperatures to ensure juicy meat and crunchier skin. This approach provides a flavorful poultry option without deep frying, ideal for a satisfying family meal.

Description

Crispy Baked Chicken Drumsticks combines a series of seasonings with a light flour and baking powder dusting to bring a textured, flavorful crust to the chicken skin. The smoked paprika and garlic powder add a smoky and savory touch, balanced by the salt and black pepper seasoning. Baking on a rack in a foil-lined tray ensures even heat exposure and crispy undersides without excess grease. The two-stage baking starts at a moderate oven temperature to cook through the chicken and finishes at a higher heat to crisp the skin to a pleasant crunch.

This recipe suits those seeking baked chicken options with a crispy finish, and it pairs well with a variety of sides such as roasted vegetables or a fresh salad. The use of common pantry spices and straightforward techniques make it accessible for home cooks.

Notes highlight substitution options for spices, the importance of not confusing baking powder with baking soda to maintain flavor, and practical tips like lining trays with foil for easier cleanup and using a rack to crisp the chicken bottom. Alternative chicken cuts like wings or thighs are mentioned with adjusted baking times.

Ingredients

Servings
  • 12 chicken drumstick Note 1
  • 2 tbsp extra virgin olive oil
  • cooking spray

Seasoning (Note 2):

  • 3 tsp garlic powder
  • 3 tsp onion powder
  • 5 tsp smoked paprika
  • 2 tsp black pepper
  • 1 1/2 tsp kosher salt cooking salt
  • 4 1/2 tbsp all-purpose flour also known as plain flour
  • 3 tsp baking powder (makes them crispier, DO NOT confuse with baking soda / bi-carb) (Note 3)

Instructions

  1. Preparation: Preheat the oven to 200°C/390°F (180°C fan-forced). Line a tray with foil then place a rack on the tray (makes the underside of the drumsticks crispier, Note 4).
  2. Seasoning: Mix the Seasoning ingredients in a shallow bowl.
  3. Coat in oil: Toss the drumsticks in the olive oil. Stretch and pull the skin on each drumsticks to cover as much of the flesh as possible.
  4. Coat in seasoning: Coat a drumstick in the Seasoning then shake the excess off well. Place on the rack. Repeat with remaining drumsticks.
  5. Spray with oil: Spray the legs generously with oil.
  6. Bake for 30 minutes, rotating the tray halfway through. Increase the oven to 220°C / 430°F (200°C fan) then bake for a further 15 minutes or until the skin is crispy. Enjoy!

Notes

  • You can substitute chicken wings or skin-on bone-in thighs; adjust baking times accordingly.
  • Replace garlic powder with extra onion powder, or vice versa; smoked paprika can be swapped with sweet paprika.
  • Use baking powder, not baking soda, to improve crispiness without affecting taste.
  • Lining the tray with foil simplifies cleanup, and placing chicken on a rack crisps the underside.
  • If no rack is available, line the tray with paper and turn the drumsticks halfway through baking, allowing for additional time to crisp.
