Description
The recipe begins by patting chicken wings dry to remove moisture, which is crucial for crispy skin. The wings are coated evenly with aluminum-free baking powder, salt, and optional seasonings such as Creole seasoning. Baking starts at a low temperature of 250°F for 30 minutes to render fat and dry the skin.
After flipping, the oven temperature is increased to 425°F to crisp the skin further and cook the wings fully. A final broiling step can be used for extra crispiness. The result is wings with a crunchy outer layer and moist interior. They can be served plain or tossed in a preferred wing sauce.
This oven method provides a crispy alternative to frying and works well for a snack or appetizer. The baking powder plays a key role by altering the skin's pH and texture to encourage browning and crisping without added oil.
Ingredients
- 2 pounds chicken wings separated and wing tips removed
- 1 tablespoon baking powder (aluminum free)
- 1 teaspoon salt
- Extra seasonings as desired – I used 2 tablespoons Homemade Creole Seasoning
Instructions
- Pat the wings as dry as you can get them. This will help with the crispiness.
- Set the wings into a large bowl and season with baking powder, salt, and your preferred seasonings. Toss to get them nice and coated. The baking powder helps with the crispiness. - Heat oven to 250 degrees F (120 C). Set the wings onto a lightly oiled baking sheet and bake for 30 minutes. Flip the wings.
- Increase oven heat to 425 degrees F (220 C) and bake another 30 minutes, or until the wings are cooked through and the skins are nice and crispy. If you'd like, you can hit them with the broiler for a couple minutes for an extra blast of crispiness.
