Crispy Baked Salt and Pepper Chicken Wings
Description
This recipe features chicken wings seasoned with sea salt, freshly ground black pepper, and optionally baking powder which promotes crispiness in the skin. The wings are tossed in olive oil to help seasoning adherence and baked on a parchment-lined baking sheet at a high temperature until golden and crispy, usually about 40 to 45 minutes. The baking powder elevates the skin’s crispness without altering flavor.
Resulting wings have a crunchy exterior and juicy interior, making them a satisfying finger food. Garnishing with chopped fresh parsley adds a touch of color and herbal brightness that contrasts with the rich wings.
Using sea salt provides a more nuanced salt flavor. Lining the baking sheet prevents sticking and eases cleanup. If wings don’t reach desired crispness, a brief broil at the end can help. Pre-cut wings into drumettes and wingettes ensure even cooking. This method offers a less greasy alternative to frying while still delivering crisp, savory wings.
Ingredients
- 2 pounds chicken wings
- 2 tablespoons olive oil
- 1 teaspoon black pepper freshly ground
- 2 teaspoon salt sea salt
- 1 tablespoon baking powder optional
- 1 tablespoon parsley fresh, chopped for garnish
Instructions
- Preheat oven to 425 F degrees. Line a baking sheet with parchment paper.
- Pat chicken wings dry with paper towels the place them in a large bowl. Drizzle the wings with the olive oil and toss well, making sure each wing is coated with a bit of olive oil.
- Sprinkle the chicken wings with the pepper and salt, and toss well. If using baking powder, sprinkle it all over the wings then toss well.
- Arrange the wings in a single layer on the prepared baking pan. Bake for about 40 to 45 minutes or until they're golden crisp.
- Sprinkle with more salt and pepper if preferred and garnish with some chopped parsley.
Notes
- Line your baking sheet with parchment paper to prevent the wings from sticking and ease cleanup.
- If the wings are not crisp enough after baking, briefly broil for about 3 minutes, watching carefully to avoid burning.
- Use sea salt for a better depth of flavor compared to regular table salt.
- Remove wing tips if present and cut wings into drumettes and wingettes for even cooking.
