Crispy Baked Zucchini Chips
Description
This recipe creates crunchy zucchini chips by slicing the zucchini very thin, then coating the slices with a seasoned olive oil mixture containing salt, pepper, onion powder, and paprika for flavor. The initial high-temperature baking promotes browning without burning, which adds subtle roasted notes and color spots that indicate doneness before reducing the heat.
Lowering the oven temperature finishes the drying and crisping process to avoid burning and ensure an even, crispy texture. The resulting chips hold their shape and offer a pleasant crunch that contrasts with the moisture of fresh zucchini when raw.
Serving these chips fresh the same day preserves their crispness, making them a simple vegetable snack or accompaniment. They require careful attention during baking, especially in the early phase, to prevent over-browning, with periodic checks every 10 minutes during the second bake.
Ingredients
- 1 zucchini washed and dried, medium
- 1 tablespoon olive oil
- ½ teaspoon kosher salt
- ½ teaspoon black pepper
- ¼ teaspoon onion powder
- ½ teaspoon paprika
Instructions
- Preheat the oven to 450 degrees. Line two baking sheets with parchment paper.
- In a large bowl, combine the oil, salt, pepper, onion powder, and paprika. Stir to combine.
- Thinly slice the zucchini with a knife or mandolin.
- Add the zucchini slices to the bowl and toss well so that each slice is coated with the seasoned oil.
- Place the zucchini slices on the prepared baking sheets.
- Bake for 8-15 minutes watching very closely. When the zucchini starts to show some brown spots remove from the oven and set aside.
- Reduce the oven temperature to 180-200 degrees. Return the zucchini to the oven and cook for an additional 20-40 minutes or until the slices are crispy.
- Remove from the oven and cool.
Notes
- Slice zucchini very thinly using a sharp knife or mandolin to ensure even, crisp chips.
- Monitor closely during the first baking phase; remove from the oven when brown spots appear to prevent burning.
- Finish baking at a lower temperature, checking every 10 minutes, until slices are fully crisp.
- These chips are best enjoyed the same day as long-term storage diminishes their crispness.
