Crispy Beef and Bean Wraps

These Crispy Beef and Bean Wraps combine lean ground beef cooked with onions and a spiced mixture of refried beans and green chiles. Wrapped in tortillas layered with Mexican-style cheese, the wraps are folded into flats and pan-cooked until the outsides develop a golden crisp. The mixture balances mild spices like garlic powder, chili powder, cumin, and paprika for a savory filling. This recipe yields a crunchy, cheesy wrap that holds its shape well and provides satisfying textures and flavors for a casual meal or snack.

Description

Crispy Beef and Bean Wraps bring together ground beef cooked with diced onions and an aromatic blend of refried beans, green chiles, and spices. The filling features garlic powder, chili powder, cumin, and paprika, offering a mild warmth without overpowering flavors. This mixture is then nestled inside tortillas sprinkled with Mexican-style shredded cheese. Folding the tortilla into thirds creates a flat, thick wrap rather than a burrito shape, which crisps evenly on a griddle or skillet to develop a golden-brown, crunchy exterior.

The cooking process involves browning the beef and onions, combining them with the seasoned bean mixture, and layering within tortillas before crisping. The result is a wrap with contrasts between the tender filling and the crispy tortilla shell. It offers a satisfying handheld option that can be served as a convenient lunch or casual dinner. The melting cheese adds extra richness and binds the wrap together during cooking.

These wraps are versatile for serving with salsa, sour cream, or guacamole on the side. Using cooking spray or a light brush of olive oil ensures the tortillas crisp nicely without excess grease. The filling can be adjusted for spice levels or customized with additional vegetables or toppings. This method of folding and cooking creates a distinct texture and presentation compared to rolled burritos.

Ingredients

Servings

Filling:

  • 1 pound ground beef lean
  • ½ cup onion diced
  • 16-ounce ounce can refried beans
  • 4-ounce ounce can green chiles drained
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon cumin ground
  • ½ teaspoon paprika
  • ½ teaspoon salt

Wraps:

  • 2 to 3 to 3 cups shredded cheese Mexican-style
  • 8 to 10 to 10 tortillas 8- or 10-inch
  • cooking spray or olive oil, for brushing

Instructions

  1. In a skillet set over medium heat, cook the ground beef and onion until the meat is no longer pink, 3 to 4 minutes. Drain excess grease.
  2. In a medium bowl, stir together the refried beans, green chiles, garlic powder, chili powder, cumin, paprika and salt. Add the ground beef and onions and stir to combine evenly.
  3. For each wrap, sprinkle about 1/4 cup cheese over the tortilla then spread about 1/2 cup filling down the center in a wide strip.
  4. Fold one side of the tortilla over the filling, followed by the other side (so that the tortilla is folded into thirds). Press lightly to flatten. It should be thick and flat, not rounded like a burrito.
  5. Heat a large non-stick griddle or skillet over medium heat until hot. I use an electric griddle set to about 350 degrees F.
  6. Spray the seam side of the wraps with nonstick cooking spray (or brush with a bit of olive oil). Place the wraps, seam side down, on the griddle or pan and cook until golden brown and crisp, about 2-4 minutes.
  7. While they cook, spray the top with nonstick cooking spray (or brush with olive oil) and carefully flip with a wide spatula and press down lightly to flatten just a bit. It's normal for a little filling to fall out when flipping – just tuck it back into the ends of the wrap with the spatula.
  8. Cook for another 2-4 minutes until golden and the filling is hot and cheesy melted.
  9. Serve warm with sour cream, salsa, or other toppings of your choice!
