Ingredients
- 1 lb broccoli about 3 cups, florets
- 2 large egg
- 1/2 cup cheddar cheese or melting cheese of choice, shredded
- 1/4 cup Parmesan Cheese or sub with more cheddar cheese
- 1 clove garlic minced
- 2 tablespoons flour can sup with almond flour
- 1 teaspoon Cajun seasoning or taco seasoning or favorite spice blend
- 1 tablespoon neutral cooking oil generic cooking oil
Instructions
- Blanch broccoli florets in a pot of boiling water for 2 minutes or just until cooked. Drain well and cut into small pieces (almost like broccoli rice).
- In a large bowl, whisk the eggs. Add the cheddar cheese, parmesan cheese, garlic, flour, spices, and chopped broccoli to the bowl. Stir until fully combined.
- Heat oil in a non-stick pan over medium-high heat. Scoop 1/4 cup of batter and drop into the pan, gently flattening with a spoon, to about ½ inch thickness.
- Cook each fritter for 2 to 3 minutes per side until golden brown. Repeat with remaining Batter.
