Crispy Carnitas Guacamole

Crispy Carnitas Guacamole blends creamy mashed ripe avocados with queso fresco, cilantro, onion, and lime juice for a fresh and tangy base. Topped with crisped pulled pork carnitas that are roasted in the oven to add texture and depth, this guacamole variation offers a satisfying contrast of creamy and crunchy elements. Jalapeno adds a mild heat, rounding out savory and refreshing flavors perfect for serving as a snack or appetizer.

Description

This guacamole recipe incorporates ripe avocados mashed together with fresh onion, bright lime juice, chopped cilantro, queso fresco, and diced jalapeno for a balanced creamy and tangy mix. The addition of queso fresco adds a mild salty flavor and slight texture variation. The pork component uses pulled pork that is crisped in the oven at 425°F, tossing every ten minutes to create crunchy edges that mimic traditional carnitas texture.

The assembly offers a layering of flavors and textures: the smooth avocado blend contrasted by the crispy carnitas topping, with fresh jalapeno slices adding a touch of spice. This dish can serve as a flavorful twist on traditional guacamole and pork, suitable for sharing at gatherings or as a rich appetizer.

For best results, crisp the pork just before serving to maintain its texture. Adjust seasoning after mashing to ensure balanced salt and acidity according to taste preferences.

Ingredients

Servings
  • 1 cup pork pulled
  • 4 avocado ripe
  • 1 jalapeno pepper seeded and diced
  • 1/3 cup queso fresco cheese plus extra for topping, crumbled
  • 1/4 cup cilantro chopped, fresh
  • 3 tablespoons onion diced; sweet variety
  • 1 lime juiced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 jalapeno pepper sliced, for topping if desired

Instructions

  1. You can easily make the pork ahead of time or use leftover pulled pork, which is what I'd suggest for this recipe! Before serving the pork, I like to crisp it up in the oven. To do this, I spread the shredded pork in a large baking dish. Preheat the oven to 425 degrees F. Place the baking dish in the oven and roast for 20- 30 minutes, tossing the pork with a fork every 10 minutes. You don’t HAVE to do this step, but it really makes it taste more like authentic carnitas.
  2. Place the avocados, the cheese, cilantro, onion, lime juice, salt and pepper to a bowl and mash it! Mash and stir until everything is combined. Make it as smooth or as chunky as you’d like! Taste and season with additional salt, pepper or lime juice if needed. Top with the pork, a sprinkle of extra cheese and cilantro and a few sliced peppers!
