Description

Crispy Cheese Rolls bring together two types of cheese—akawi and mozzarella—with parsley and black pepper for seasoning, wrapped in thin spring roll wrappers. The rolls are filled with a moist cheese blend, rolled using a water-flour paste to seal the edges securely, then chilled briefly before baking to help them hold shape. Baking at 425°F produces a crisp, golden crust contrasted with a melty, creamy cheese filling inside.

The combination of akawi cheese, which is mild and slightly salty, with stretchy mozzarella creates a distinctive layered texture and flavor. Seasoned with fresh parsley and pepper, these rolls taste fresh and herbaceous.

  • 2 cups akawi cheese shredded
  • 1 ½ cups mozzarella cheese shredded
  • ¼ cup parsley chopped
  • ½ teaspoon black pepper
  • 1 cup water warm
  • 1 tablespoon all-purpose flour
  • 25 spring roll wrappers square 8-inch, pastry

Instructions

  1. Combine the akawi cheese, mozzarella cheese, parsley and black pepper in a large bowl.
  2. Combine the warm water and all-purpose flour in a small bowl until a paste forms.
  3. Arrange the spring roll wrappers on a dry cutting board or other working surface, and position them at an angle so that the corner of each wrapper is closest to you.
  4. Place 2 tablespoons of the cheese mixture in the lower third of each spring roll wrapper. Beginning at the bottom angle closest to you, fold the bottom and then the sides over.
  5. Use your fingers or a pastry brush to dab a little of the water flour paste mixture on the triangle unfolded part and then continue to roll, folding the edges inward along the way. Press lightly to seal the edges together.
  6. Place the stuffed spring rolls seam side down on the prepared baking dish and repeat with the remaining wrappers until complete. Freeze for 30 minutes.
  7. Preheat the oven to 425°F. Line a baking sheet with parchment paper. Brush the spring rolls lightly with olive oil or coat them with cooking spray.
  8. Bake in the preheated oven until they are golden brown and crisped on the outside, about 15-20 minutes.

  • Store leftover cheese rolls in an airtight container in the refrigerator for up to one week or freeze for longer storage.
