Crispy Chicken Drumsticks

Crispy Chicken Drumsticks are baked chicken legs coated with a dry mix of flour, cornstarch, and spices such as garlic powder, onion powder, paprika, and salt. Olive oil helps the coating adhere and promotes crispiness. The drumsticks bake on a rack at high heat to allow air circulation and a crispy crust, resulting in evenly cooked, flavorful chicken with a tender inside.

Description

This recipe involves drying the chicken drumsticks, coating them in olive oil, then dredging in a seasoned blend of flour, cornstarch, garlic powder, onion powder, paprika, and salt. The cornstarch and flour mix creates a light, crisp outer crust when baked. Chicken pieces are arranged on a foil-lined pan with a rack, sprayed with a light olive oil mist, and baked at 425°F (about 220°C) for 40 minutes without flipping, as the rack allows hot air to crisp the undersides.

The high heat and rack elevation combine to produce drumsticks with a golden, crispy skin outside and moist, juicy meat inside. The seasoning imparts a balanced savory flavor boosted by garlic and paprika. This method avoids frying while achieving crispness.

Serve these drumsticks with preferred sides such as roasted vegetables, salads, or grain dishes. The recipe scale makes a large batch suitable for gatherings or meal prep.

Ingredients

Servings
  • 10-12 chicken drumstick
  • 2 tbsp olive oil
  • tbsp flour
  • 2 tbsp cornstarch
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp paprika
  • 1 tsp salt
  • olive oil spray

Instructions

  1. Line a sheet pan with tin foil and place a rack onto of it. Spray it with some non-stick cooking spray.
  2. Heat oven to 425F.
  3. Pat dry the chicken drumsticks if they are not dry.
  4. Coat the drumsticks in olive oil and set aside.
  5. In a large bowl or ziploc bag, mix together the flour, cornstarch, garlic powder, onion powder, paprika, and salt.
  6. Coat each drumstick in the mixture, making sure to shake off any excess coating. It doesn’t need to be thick to be crispy.
  7. Place each drumstick, evenly spaced apart, onto the baking rack, then give the chicken drumsticks a spritz of olive oil, and bake for 40 minutes. Flip if you desire but the rack allows hot air to flow underneath the drumsticks so the bottom side gets pretty crispy without flipping.
  8. Serve with your side of choice.
