Feta Fried Egg

  • 1 egg
  • ¼ cup feta cheese crumbled, 35g
  • 2 teaspoon olive oil for frying

Tortilla and Toppings

  • 1 coconut flour tortilla or low carb tortilla / toast of your choice
  • 2 teaspoon cream cheese
  • ¼ avocado sliced, 38g
  • ¼ cup lettuce leaves
  • 1 tablespoon chives chopped
  • ½ teaspoon nigella seeds
  • pinch of salt for the egg yolk only, sea salt

Instructions

Feta Fried Egg Instructions

  1. Heat olive oil in a small frying pan over a medium heat. Crumble the feta into the pan in a circle, leaving space in the middle for the egg.
  2. Crack the egg into the feta circle. Continue to cook on a low to medium heat until the egg white is fully cooked, the yolk is still soft and the feta has melted into a golden crispy crust. This takes 3-4 minutes.
  3. Remove the feta egg from the pan with a large spatula and serve straight away.

Serving Suggestion

  1. Spread a coconut flour tortilla with cream cheese.
  2. Top with sliced avocado and a handful of lettuce leaves.
  3. Place the feta fried egg on top and sprinkle with chopped chives and nigella seeds. Season the egg yolk with a pinch of sea salt (feta is a salty cheese). Serve immediately.
