Crispy Fried Onions
Description
The recipe begins with slicing onions thinly into rings, then marinating them in buttermilk for at least 20 minutes, which softens the onions and helps the flour adhere. The coated onions are dredged in a mixture of flour, salt, and black pepper, which forms a seasoned crust during frying.
Frying the onions in hot oil (about 375°F) until golden brown takes only a few minutes, resulting in a crunchy exterior and a mild onion sweetness inside. Draining on paper towels and sprinkling with salt refines the seasoning.
These fried onions can serve as a crispy garnish for salads, casseroles, or burgers, or enjoyed on their own as a savory snack. Their crisp texture contrasts well with creamy or soft dishes.
Leftovers keep well in the refrigerator in an airtight container for up to 4 days and are best reheated in an oven or skillet to maintain crispness rather than microwaving. Seasoned flour blends can be customized by adding preferred spices. Onions can be sliced and dredged ahead of time to save preparation time before frying.
Ingredients
- 1 pound onion sliced into ⅛ inch rings
- 1 cup buttermilk
- 2 cups all-purpose flour
- 1 teaspoon salt plus more for serving
- ½ teaspoon black pepper
- vegetable oil for frying
Instructions
- Separate onion rings and combine with buttermilk in a freezer bag or large bowl and let marinate for 20 minutes (or up to 24 hours if you'd like).
- While onions are marinating, combine flour, salt, & pepper in a large bowl.
- Heat 1" of oil in a skillet or heat a deep fryer to 375°F.
- Remove onions from the buttermilk and drain well. Gently toss with the flour mixture.
- Add small batches of onions to the hot oil. Gently stir with tongs and cook until browned, 2-3 minutes.
- Remove from the oil and drain on paper towels. Sprinkle with seasoned salt or kosher salt if desired.
Notes
- Store leftover onions in an airtight container in the fridge for up to four days.
- Reheat in the oven or on the stove to keep crispness; avoid microwaving as it causes sogginess.
- Add desired seasoning blends to the flour for varied flavors.
- Onions can be sliced and coated in flour in advance; keep refrigerated until frying.
- Nutrition estimations vary with onion thickness and oil temperature; flour used is roughly half the amount tossed with onions.
