Crispy Garlic Parmesan Asparagus
Description
This recipe starts by coating cleaned asparagus spears with a blend of melted butter, olive oil, minced garlic, freshly grated Parmesan, and crispy panko breadcrumbs seasoned with salt, pepper, and chopped parsley. The asparagus is spread evenly on a baking sheet and roasted at 400°F until just tender. A brief broil afterward crisps the breadcrumb topping to a golden brown, giving a satisfying crunch that contrasts with the asparagus’s natural tenderness.
The garlic and Parmesan enrich the flavor, while the panko breadcrumbs add a textured crust without overpowering the vegetable. Roasting concentrates the asparagus’s fresh flavor, and the quick broil step prevents sogginess in the topping, providing a crisp finish.
This side dish serves well warm alongside meats or other proteins and works as a simple yet flavorful way to incorporate vegetables into a meal. The salty, herbaceous topping elevates the natural sweetness of the asparagus.
The notes recommend using panko breadcrumbs specifically for the crisp texture and crunch benefit, distinguishing it from regular breadcrumbs which may become soggy.
Ingredients
- 2 pounds asparagus washed, dried and wood ends removed
- 3 tablespoons butter melted, unsalted
- 2 tablespoons olive oil
- 5 cloves garlic minced
- ½ cup Parmesan Cheese fresh grated, or Parmigiano-Reggiano cheese
- ½ cup panko breadcrumbs
- 2 teaspoons parsley finely chopped
- 1 pinch salt to taste, about ½-3/4 teaspoon salt and ¼ teaspoon pepper
- 1 pinch black pepper
Instructions
- Preheat the oven to 400°F (205°C). Lightly grease a baking tray or sheet with non stick cooking oil spray.
- Place the trimmed asparagus in a bowl. Add the rest of the ingredients and use your hands to evenly coat onto the asparagus.
- Transfer the asparagus and breadcrumb mixture onto prepared baking sheet and arrange into one even layer. Bake for about 10 minutes, or until the asparagus are just tender.
- Broil/grill for 2-3 minutes until breadcrumbs are golden browned and asparagus has reached desired doneness.
- Serve warm.
Notes
- Use panko breadcrumbs to achieve a crispy, crunchy topping that adds texture to the asparagus.
