Crispy Garlic Smashed Potatoes
Description
This recipe starts by boiling whole small red potatoes until fork tender. After draining, they are placed on a greased baking sheet and gently smashed just enough to flatten without breaking apart. Baking at 400°F crisps the potatoes’ surfaces and edges after 20 minutes.
Meanwhile, minced garlic is combined with melted butter, which is spooned over each potato, followed by seasoning with salt and pepper. The potatoes bake for an additional 5 to 7 minutes to infuse the garlic flavor and crisp the tops further. Fresh chopped parsley is sprinkled on the finished dish for color and a subtle herbal note.
The smashed potatoes offer a textured contrast of crispy exterior with soft, fluffy interior. They can be served warm as a side or appetizer. The garlic butter intensifies the flavor, distinguishing these from plain roast potatoes.
The notes mention cooking potatoes ahead and reheating them by microwaving under a damp paper towel to facilitate smashing when ready to bake, saving time on serving day.
Ingredients
- 1 pound red potato washed, small
- 4 cloves garlic minced
- 3 tablespoons butter melted
- salt to taste
- black pepper to taste
- parsley chopped, for garnish, fresh
Instructions
- Bring a large pot of water to a boil. Add the whole potatoes to the pot and cook for 20 minutes or until fork tender. Drain the potatoes.
- Preheat oven to 400 degrees.
- Grease a baking sheet with non-stick cooking spray. Place the potatoes on the baking sheet and gently smash with a fork, potato masher, or the bottom of a glass. (Don't press down hard enough to break the potatoes apart. You want them to still hold their shape, just smashed.)
- Bake for 20 minutes.
- Stir together the garlic and melted butter. Spoon the garlic butter over the top of each potato and then season them with salt and pepper.
- Bake for another 5-7 minutes. Remove the potatoes from the oven and sprinkle with chopped parsley for garnish if desired. Serve warm.
Notes
- Boil potatoes ahead and refrigerate covered with a damp paper towel to reheat quickly before smashing and baking.
- Gently smashing potatoes preserves their shape while creating crispy surfaces during baking.
- Use fresh minced garlic in the melted butter for pronounced garlic flavor.
- Serve warm to enjoy the contrast of crispy edges and tender centers.
