Crispy Home Fries Recipe

Crispy Home Fries are made by cooking large chunks of russet potatoes and sliced sweet onions in canola oil, first covered to steam and soften, then uncovered to brown and crisp. Finishing with fresh lime juice and zest adds a bright citrus note enhancing the potatoes' richness. This method produces tender centers contrasted with golden, slightly crisp edges, making it a satisfying side dish or breakfast addition that can be served with ketchup if desired.

Description

This home fries recipe starts by coating russet potato chunks and thinly sliced medium sweet onion in canola oil and cooking them over low to medium heat covered. This steaming phase softens the potatoes while infusing flavor. After about 10 to 13 minutes, the lid is removed and heat increased to brown the potatoes and onions, creating a crispy exterior. Lime juice and zest added near the end introduce a distinctive citrus brightness that cuts through the richness of the fried potatoes.

The contrast between soft, fluffy interiors and a lightly crisped surface gives a pleasing texture. Salt and pepper are adjusted during cooking to balance flavors. Home fries make a versatile companion for breakfast or brunch plates but also pair well with casual meals.

Leftovers keep well in the refrigerator for up to five days and reheat best in a skillet with additional oil or in the oven. Stirring during cooking prevents burning and ensures even browning. The lime element is key to differentiating this recipe from traditional home fries, imparting an unusual but complementary flavor.

Ingredients

Servings
  • 1 ½ tablespoons canola oil or vegetable oil
  • 1 russet potato chopped, large
  • ½ onion thinly sliced, medium sweet
  • black pepper to taste
  • salt to taste
  • 1-3 teaspoons of lime juice
  • ½ - 1 teaspoons lime zest
  • ketchup optional

Instructions

  1. In a large skillet over low to medium heat, add enough oil to cover the bottom of the skillet.
  2. When the oil is heated through after a few seconds, add potatoes and onions. Mix around to coat in oil. Cover with lid and cook for 10 to 13 minutes. Stir occasionally. After 6 or 7 minutes, add a couple shakes of pepper and salt.
  3. When the potatoes are tender enough to be split with a spatula without too much effort, take off the lid, and turn up the heat to start browning the potatoes and onions. Cook for another 5 to 7 minutes, stirring enough to brown them all over. During this part, squeeze the juice of up to half a lime in - up to your taste. A minute or two before removing from heat, add more pepper and salt to taste.
  4. Serve it up with ketchup if you want to keep it classy and classic. Also, grate some lime zest right on top.
