Crispy Onion Rings
Description
This recipe uses sweet onions like Vidalia or Walla Walla, cut into 1/4-inch thick rings separated from their centers. The batter mixes flour with seasoned salt and baking powder, combined with cold water and lightly beaten eggs for a smooth coating. Deep-frying in hot oil crisps the batter quickly, sealing the onion inside while creating a golden, crunchy shell.
The crisp texture contrasts the sweet softness of the onion. Careful temperature control of the oil helps prevent greasy or burnt rings. The rings are served hot with a dipping sauce such as fry sauce or ketchup to complement their mild sweetness and crunch.
Keeping fried batches warm in a low oven helps maintain texture when cooking multiple portions.
Ingredients
- 2 large sweet onion Vidalia or Walla Walla
- 1 cup all-purpose flour
- 1 ½ teaspoons seasoned salt
- ¾ teaspoon baking powder
- 1 cup water cold
- 2 large egg lightly beaten
- vegetable oil for frying
- Fry sauce for serving
Instructions
- Cut off the top of each onion and peel away the skin. Using a sharp knife, cut the onions into 1/4-inch slices (or thicker if you prefer). Separate the individual onion rings from each slice, discarding the centers. Set aside.
- In a medium mixing bowl, whisk together flour, seasoned salt, and baking powder. Add in water and eggs and mix until the batter is smooth.
- Add 2 inches of oil in a large pot and bring to 375 degrees F over medium-high heat. Use an oil thermometer to monitor the temperature.
- Dip onion slices in the batter and gently shake to remove any excess. Then, carefully drop the onions into the hot oil. Do not overcrowd the pot.
- Cook for 2 to 4 minutes per side, or until golden brown. Use tongs or a spider strainer to remove cooked onion rings to a paper towel-lined baking sheet. Repeat with remaining onions and batter.
- Serve onion rings immediately. I like them with fry sauce or ketchup for dipping.
Notes
- Keep cooked onion rings warm on a baking sheet in a 200°F (warm) oven between frying batches to preserve crispness.
