Crispy Oven Baked Chicken Thighs

Crispy Oven Baked Chicken Thighs are bone-in, skin-on pieces seasoned with paprika, dried herbs, and garlic and onion powders. Roasting at high heat creates crispy, browned skin with tender meat inside. A brief broiler finish enhances the skin's crispness, making this an approachable dish with straightforward seasoning.

Description

This recipe uses six bone-in, skin-on chicken thighs trimmed of excess fat and lightly coated in olive oil. A spice mix of paprika, dried basil, oregano, garlic powder, onion powder, salt, and pepper is evenly rubbed over the chicken. Baking in a 450°F oven for 35-40 minutes cooks the thighs through while crisping the skin.

The dish is finished under the broiler for 1-2 minutes to add extra crispiness to the skin surface. The result is chicken with a golden, textured crust offering a balance of savory and aromatic notes from paprika and herbs.

This preparation works well as a main course served alongside vegetables, grains, or salads. It relies on oven dry heat for crisp skin without frying.

Ingredients

Servings
  • 6 chicken thighs bone-in, skin-on
  • 2 tablespoons olive oil
  • 2 teaspoons paprika
  • 1 teaspoon basil dried
  • 1 teaspoon oregano dried
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 450 degrees Fahrenheit. Lightly grease a 9x13 pan or 3 quart baking dish.
  2. Trim the chicken thighs of any excess fat or skin. Place chicken thighs directly into the prepared dish, skin side up.
  3. Drizzle chicken skin with olive oil and rub to coat.
  4. In a small bowl, stir together paprika, basil, oregano, garlic powder, onion powder, salt, and pepper. Sprinkle evenly on top of chicken thighs.
  5. Roast chicken in the preheated 450 degree oven for 35-40 minutes, or until chicken reaches an internal temperature of 165 degrees Fahrenheit.
  6. Remove from oven and brush the tops of each piece of chicken with the juices from the pan. Place under the broiler setting for 1 to 2 minutes to finish and add extra crispiness to the skin.
